Recipe

- In a mixing glass, combine the following ingredients:

  • 1.75 oz / 52 mL Tequila Blanco

  • 0.35 oz / 10.5 mL Ancho Reyes (Red)

  • 0.25 oz / 7.5 mL Giffard Vanille

  • 0.75 oz / 22.5 mL Pineapple Lime Cordial (Acid Adjusted)

  • 0.65 oz / 19.5 mL Lime Juice

  • 7 drops / 0.35 mL Saline Solution

- Now, in a separate non-reactive glass container measure 0.75 oz / 22.5 mL Whole Milk, slowly pour Cocktail Mix into the Milk (not the other way around), allow the mixture to rest undisturbed for 10–15 minutes while curds fully form. 


- Then strain through a fine mesh strainer to remove large solids, followed by a coffee filter or Superbag for clarity. 


- Serve over a large cube or stir over ice briefly, strain and enjoy neat.


- Garnish with Tajin Rim, Pineapple Frond, Dehydrated Lime Wheel


Pineapple Lime Cordial Recipe:

  • 250 g White Sugar

  • Peels of 6-8 Limes (Organic, unwaxed)

  1. Combine Sugar and Peels in airtight container, let rest for 12 hours to extract oils.

  2. After resting, add: 225 g Pineapple Juice, 25 g Lime Juice, 3.5 g Citric Acid, 1.75 g Malic Acid into mix.

  3. Stir until everything is dissolved, then strain out peels and fine particles through a coffee filter. Yields 16 oz, lasts 1 month refrigerated.
